Crystal Lee Dishes on Little Soya’s Emerging Florida Market


Crystal Lee, Little Soya’s Regional SVP of Global Accounts – East, recently flew down to Florida to help spread the good word about the tastiest soy sauce in the universe and to check in on some of our amazing clients across the area. Upon her return, we caught up with Crystal for a brief discussion about her trip to the Sunshine State.


Tell us a little bit about your trip to Florida. Were you there on official Little Soya business?

I had the opportunity to visit both Orlando and Miami. I had meetings with several big potential clients as well as with several distributors while I was there. Florida is one of our new emerging markets, so this trip was very important to our business.
Miami’s dining scene has really exploded in recent years as celebrity chefs have come and made their mark. What was your experience with the local food scene while you were there?

Miami has always had a pretty decent food scene, but there does seem to be some great new options popping up and it’s a great time to get our product out there.
I understand you made a visit to Makoto Restaurant while you were there. What can you tell us about the relationship between the highly rated Japanese restaurant and Little Soya?

It was great to stop by Makoto and to see the restaurant and meet their remarkable team. They haven’t actually started using Little Soya just yet, but they are about to now that Chef Page Pressley knows he can get Little Soya.
You also visited our Featured Chef Joe Bonavita, Jr. at SooWoo. He’s a huge Little Soya fan and he seems to be using our soy sauce in some really interesting and innovative ways. What were your impressions during your visit?

I was very excited to see what all Chef Joe does with the menu, and I was lucky enough to have a private tasting of some amazing dishes. Chef Joe is a real talent, and we’re so humbled that he loves our product!
As we all know, Little Soya is quickly gaining popularity among chefs and food lovers alike across the country. What can you tell us about Little Soya’s growth in Florida and particularly in Miami, one of the nation’s hottest dining scenes?

It’s just beginning but it’s well on its way. We expect to continue to grow the Florida market, and we look forward to what’s to come.
What’s next for Crystal Lee? Any more trips in your near future?

Thanksgiving Recipe: Little Soya Honey Glazed Turkey

Don’t look now, but in just over a week, it’ll be Thanksgiving. This year has flown by! And if you’re like us, you’re probably starting to scramble planning a Thanksgiving meal for your loved ones. Don’t worry, we’ve got you covered. Today, we’re sharing a unique recipe that adds a special twist to the traditional Thanksgiving turkey. Introducing the Little Soya Honey Glazed Turkey!

The Little Soya Honey Glazed Turkey adds a bit of sweetness and depth of flavor to your bird, giving it a beautiful shine and vibrant color that makes mouths water at first sight. The good news is this recipe is fairly simple and doesn’t require much more planning than cooking a traditional Thanksgiving turkey, but a few little tweaks make a world of difference with flavor and presentation.



Little Soya Honey Glazed Turkey Recipe



1 16-lb turkey

2 cups Little Soya gluten-free soy sauce

1 cup honey

¼ cup sesame oil

1 TBS salt

1 TBS ground pepper

1 tsp Chinese five spice




  • In a large mixing bowl, mix Little Soya soy sauce, honey, and sesame oil together. Once mixed, place the turkey in the bowl and let marinate breast side down for 1 hour. Turn the turkey and marinate breast side up for an additional 15-30 minutes.
  • Preheat oven to 350⁰
  • Combine salt, pepper, and five-spice in a small bowl to create your seasoning mix.
  • Remove turkey from marinade, saving excess marinade.
  • Place turkey in large roasting plan with the breast side facing up. Season liberally with seasoning mix. Turn the turkey to breast side facing down once finished seasoning.
  • Add 3 cups water to roasting pan; over turkey with foil loosely.
  • Roast turkey for a total of 4 hours, adding leftover marinade and 1 cup water once an hour.
  • Flip turkey to breast side up, use remaining marinade, cook uncovered for additional 30 minutes.
  • Ensure thigh has reached 165⁰ before pulling turkey out of oven.
  • Let rest for 30 minutes before carving.

That’s all there is to it! You’ll have a Thanksgiving turkey that has everyone clamoring for seconds! Who would have thought it could be so easy?

Mercer Kitchen, the in-house restaurant at the sleek and sophisticated Mercer Hotel, is the culinary creation of world-famous Chef Jean-Georges Vongerichten. The internationally renowned French chef is simply one of the best in the world, and he has opened a number of three and four star restaurants worldwide. His culinary vision has revolutionized the way we eat, and that’s why it’s such a tremendous honor for Little Soya to be a featured ingredient in several dishes at his New York eatery Mercer Kitchen.

Since opening in 1998, Mercer Kitchen has been a culinary hotspot that has attracted tourists, celebrities, and local foodies alike. The beautiful restaurant is located in the basement of a historic 1800s building, and its exposed brick walls, candlelit sconces, and communal table gives it a sexy, timeless, iconic look.

Mercer Kitchen features an American Provencal menu where fresh, seasonal ingredients are showcased in a simple yet elegant style where every flavor shines through and delights the palate. In a restaurant where just a few simple ingredients can come together to create compelling, mesmerizing flavors, it only makes sense that Little Soya, the best tasting soy sauce in the universe, would be a favorite ingredient of the chefs.

Currently, Little Soya is a featured ingredient in four delightful dishes, including:

Crispy Rice Sushi, Sashimi Salmon, Chipotle Mayo and Ponzu

Sushi rice is crisped and then topped with a spicy mayo and thin slices of sashimi salmon. The salmon is glazed with sweet Little Soya ponzu and garnished with cilantro and mint.


Tuna Spring Roll with Soy Bean Puree

Tuna spring rollSashimi grade tuna is seasoned with pickled ginger, wrapped in a spring roll wrapper and then crisped. It is sliced and served with a purée of soybeans, cilantro with a touch of garlic. Little Soya soy sauce and green Tabasco garnish the plate.


Steamed Shrimp Salad with Avocado, Mushroom, Tomato, Champagne Vinaigrette

Steamed shrimp saladThis salad is composed of organic baby lettuces, avocado, diced tomatoes, sliced mushrooms and freshly steamed shrimp. It is dressed with our ‘house vinaigrette’ (olive oil, Little Soya soy sauce, truffle juice and lemon juice) and creamy champagne vinaigrette.


Prime Niman Ranch New York Strip, Gingered Shitake Mushrooms, Caramel Soy Infused Sauce, French Fries

Client Spotlight: Facebook New York (FBNY) Café Gives Little Soya a Big ‘Like’!


It’s official: Little Soya is in a relationship with Facebook.

It’s our great pleasure to announce that Little Soya is officially the gluten-free soy sauce of choice in the brand new FBNY Café at Facebook New York headquarters. The excellent culinary team led by Chef Dean Spinks , Facebook’s Executive Chef responsible for providing meals for thousands of employees worldwide at all of the company’s cafes, at FBNY Café absolutely loves Little Soya, using it as a featured ingredient in a couple of delicious dishes.

Our very own Crystal Lee recently attended the grand opening happy hour at FBNY Café, and she had the opportunity to sample some of the tasty delights created using Little Soya gluten-free soy sauce.

First up were the pork buns marinated in Little Soya. This dish is a must for fans of Chinese BBQ pork and soft steamed Chinese buns, delicately balancing sweet and savory in every mouthwatering bite.

For those craving something a little lighter, FBNY Café also features Chipotle Little Soya Ahi Tuna Tartare Tacos (try saying that 5 times fast!). This creation from Chef Spinks is an absolute delight in every way, and the Little Soya really helps bring all of the flavors together in an unforgettable way.

FBNY Café is the latest dining spot to open at Facebook’s various offices across the globe. The dining scene has always been an important part of Facebook’s office culture, bringing employees together for fun, fellowship, and even some brainstorming while satisfying their taste buds and filling up their bellies. The company’s New York office has grown a lot over the last couple of years, and its all new FBNY Café is the latest step in giving the New York branch its own local flavor and identity. All of us here at Little Soya couldn’t be more honored to be a part of it!


Little Soya Featured in Good Housekeeping Magazine!

We are so honored that Good Housekeeping magazine featured Little Soya in their monthly Editors’ Picks section entitled “That’s Genius!”

The magazine said that our cute, convenient on-the-go gluten-free soy sauce packets are perfect to drop in your purse for a sushi night out, and we agree! It all started during the summer when Good Housekeeping magazine’s new Executive Editor Meaghan B Murphy (follow here on Twitter here) tweeted that she wished there was a good travel-sized gluten-free soy sauce available.

Umami to the rescue! We opened Meaghan’s eyes to the amazingness of our little fishy containers, and sent her some samples of Little Soya, because tasting is believing.

Needless to say, it didn’t take long for her to become a Little Soya fan! We warned her, it’s addictive!

Fast forward a few months, and Little Soya found its way onto the pages of Good Housekeeping magazine. We’ve been overwhelmed by the response from their readers, and we’ve even put up a special page on our website for those who discovered us through the magazine.

The Perfect Little Soya Secret Sauce for Burger Lovers

What takes a burger from simply great to out-of-this-world, unbelievably, can’t-get-enough-because-it’s-so-freakin’-good? Secret sauce. Think about it, most burger joints have their own secret sauce. One of the reasons In-N-Out Burger is so widely loved is because of its amazing secret sauce. Heck, even McDonald’s has its own creamy, tangy special sauce that people can’t seem to get enough of, even though it’s basically just thousand island.

But what about you, the backyard chef? You need your own secret sauce, too. You need something that will knock the socks off of your guests at your next BBQ, leaving them begging for more of that mouthwatering deliciousness. You need a secret sauce that won’t just change the way they think of burgers, but will change their entire worldview, turn their lives upside down, and cause them to question everything they thought they knew. Okay, maybe I’m getting a little carried away, but seriously, the Little Soya Secret Burger Sauce we’re about to show you will take your burgers to a whole new, revelatory level.

Little Soya Secret Burger Sauce Recipe

Making our delicious secret sauce is actually pretty easy. Here’s what you need.




  • Ketchup
  • Spicy mustard
  • Mayonnaise
  • Crunchy dill pickles (refrigerated)
  • Little Soya gluten-free soy sauce




  • Chop the dill pickles up to your desired thickness (we recommend about 1 cm chunks). Place in mixing bowl.
  • Add equal parts ketchup, spicy mustard, and mayonnaise to mixing bowl. Mix well.
  • Add a few splashes of Little Soya gluten-free sauce to the mix.
  • Spread generously on burgers.
  • Enjoy!


That’s all there is to it. Add this sauce to your burger, and you’ll take it from great to a whole new level! Just remember, it’s our little secret.
